Cassava Flour Tortillas:

1 1/2 cups cassava flour

1/4 cup extra virgin olive oil

1 cup warm water

Pinch salt

Garlic powder to taste

(You can also add other seasonings as you like.)

*Make small balls and roll them out in between 2 pieces of parchment paper.  *Transfer into heated skillet (I use an iron skillet.)

*When tortilla starts bubbling, turn it over and brown other side.

*Makes 6 - 8 tortillas

*Store in refrigerator in a large ziploc bag for up to 1 week or freeze.
